強肴: 近江牛ひれ 裂き松茸 銀杏 むかご @ 松川, 東京. Hot Dish: Omi Wagyu Fillet, Shredded Matsutake, Ginkgo Nuts, “Mukago” @ Matsukawa, Tokyo. This was the most “meaty” course of the meal, and unlike the usual marble-filled Omi wagyu, this beef fillet was relatively lean, and it gave a completely different texture and flavor. Topped with a mountain of shredded matsutake. (More beef note in next pic)
