For autumn, the main theme of Matsukawa (and in many kaiseki restaurants) is matsutake. Here they also used the local Japanese matsutake from Iwate. I previously posted the whole piles of fresh whole matsutake to be used for our meal on a plate. Because of this ingredient, the kaiseki meal was around $10000 yen more expensive than usual menu. Consider the plethora of matsutake used in different forms throughout the meal, that was probably reasonable. Here was some of the sliced matsutake to be used for one of the dishes in our meal.
