Tonight, we were so lucky to have experienced one of Kyoto's fine hidden Kaiseki restaurants. One of the most interesting dishes that we tried was the Yuba (tofu skin), which was served in a hot broth in a tub and a dipping sauce. It was so fresh and refreshingly light. I was blown away by something so simple and traditional.
