Ginza Koju with owner chef Tooru Okuda and also "Chef de Cuisine" Hisafumi Nakae 😄😄😄. Hisa and I worked and opened Nobu Dubai together in 2008 @ Atlantis Palm Jumeriah U.A.E. I still remember Hisa prepping and filleting 1000pcs of fresh Kohada for the opening party 😆😆.
