Arashiyama Kitcho**, Hokkaido - the beauty of staying at the Windsor Hotel Toya (where Michel Bras Japan is located) is the added bonus of getting to enjoy Kitcho's most capable outpost outside its Kyoto main branch. Admittedly not the biggest fan of Kitcho brand, but this is undeniably top-level Kaiseki and using famed local Hokkaido ingredients like Tsubugai whelk, keiji salmon ( rare 1 in 10,000 infant salmon) , beef and vegetables. Very easily enjoyable, flawless cooking... possibly unmatched elsewhere in Hokkaido , where pristine Kyoto style and level of Kaiseki is hard to come by. Not many places else in the world where you can enjoy Michel Bras*** and Kitcho** in the same building on the same day! ( there's also another michelin-star Steakhouse/teppanyaki if you have spare room!)
