Grilled black seaperch throat, on sticky rice. Crisp on the skin. Flesh on the throat was delicate and mildly seasoned to retain its pure, natural flavour. Sticky rice was cooked to a beautiful firmness, and addictively chewable like that of Risotto. Seemingly a Simple dish, but the technique that has gone into the preparation of it is nothing less than Sophistication.
