after the first round of 6 months long training at classic kaiseki restaurant Zeniya (Kanazawa, Japan Chef Shinichiro Takagi) I thought it is long enough for European. but at the same time I was thinking that if I really would want I could do here one year maximum. it doesn't make sense to explain why like that & how hard it is to work as a cook in Japan. straight after the first round I got an opportunity to come over to RyuGin (Tokyo, Japan Chef Seiji Yamamoto 3* michelin). I was entering this door with an idea of 3 months long stage which turned over of 16 months long training. so here I am, graduating 22 months in Japanese kaiseki cuisine. it took a lot of effort, dedication, & hard work from day to day, week to week, months, almost for 2 years to make it happen, but it is all about your state of mind how strong you are on it, & only with getting over difficulties what you have for today, you become stronger & better on where you were yesterday! now I can tell that I could go even further in kaiseki cuisine to master it to perfection, but as I have other goal & way to walk, then there is few other cuisines to study & discover before to creat something new. Japanese cuisine was just a part of my goal. today is last day of the year & I will do the last service at RyuGin & in Japanese kaiseki cuisine. I will exit this doors with full backpack of knowledge & skills, different as a person & much better as a cook on where I was before. but now is time to move on & leave Japan behind. next year I will open a new chapter & start it all over again. this was just a begun.
