Seiji San knows about my love for Wagyu so he gave me a extra piece. Unlike the commonly known Kuroge Wagyu, this is Akagyu From Kyushu. I would normally prefer a sirloin cut because of its higher fat content which just melts in your mouth, but the Filet/Tenderloin cut here while it's still fatty, the beefy flavor was much more apparent than the sirloin. I just found a new love affair with filet. Juicy, Succulent, Tender, Beefy, Fatty, and with the perfect char from the 'Binchotan' cooking method.
