サバサンド Cured Saba (Mackerel) Sandwich, made with vinegar cured saba, takuan (yellow oickled daikon), shiso leaves, all neatly tucked between crispy toasted breads smeared with mayo, a highlight of a kaiseki meal at a tiny low profile restaurant in Kyoto. My friends and I were led by a local veteran who knows inside out of Kyoto, from culture to food. From every day eats to fine dining he knows it at his fingertips. This impromptu meal (for me) turned out to be one of the most enjoyable meals in my Kyoto part of the trip. Delightful surprises often appear when you least expect them. This is one of them. To respect my friend and shop I will not put the shop name.
