After 289 meals over seven weeks in Japan, this remains the best: a 12-course modern kaiseki masterpiece at Tempura Matsu in Kyoto. Seared Omi beef with warm uni, poached lobster with shiro miso and daikon, tempura salmon liver, fat slices of toro marinated for seconds in housemade soy sauce then draped over sizzling rice. And this showstopper pictured: grilled tilefish wrapped around a pickled matsutake stem, a second stem grilled and topped with matsutake miso, and at the base, a rippled wave of fried tilefish skin.
