3rd course at Kichisen: Tofu fishcake, mushroom and yuzu. The chef, Tanigawa san, will ask you to take one sip of the dashi first before placing the yuzu. Needless to say the dashi is magnificent, full of aroma and umami whilst retaining a 'clean' finish.
